    Smithfield Market is London's ancient meat market, and at the time of making the recording was the last of the old Victorian market buildings still in use. It has a wood and glass roof, and brick walls, and because of the building's confined spaces the market relies, for carrying the meat, on an army of porters. They carry it by hand or in hand carts.
